Many roasters treat decaf as an afterthought but Saint Frank is proud every year to offer sweet and dynamic decaffeinated coffees from Colombia. Impeccably clean and vibrant flavors are expressed through a traditional washed process from select farms displaying fruit forward characteristics that pair well with their preferred decaffeination method: ethyl acetate, derived from organic sugar cane and blackberries.
This is a blend of coffees from the pioneering producers working with their sourcing partners at Azahar in Quindío Region in Colombia, the site of their central quality control office in Armenia. The particular regions of this lot, Calarca, Cordoba, Genova, and Pijao are served by the Cooperativa de Caficultores del Quindío providing quality control support and marketing. In this case connecting the producers to Azahar and to Saint Frank. The decaffeination process removes caffeine with a solvent called ethyl acetate derived from local sugar cane, blackberries, and beets. Of all the methods of decaffeination, they love this method for its ability to retain flavors of terroir and natural sweetness through local and natural processes.
